½ Pumpkin, about 250g
50mL coconut milk
50mL evaporated milk
1 teaspoon salt
50g sweet peas
5g parsley, chopped
- Peel and dice the pumpkin, boil in a pot of water for 30 minutes.
- Blend the pumpkin until smooth.Pour pumpkin mixture into a pot, add salt and coconut milk. Mix well and bring to a boil.
- In a separate pot, add snow peas to blanch, about 2 minutes, drain completely dry and shred.
- Pour the pumpkin soup into a bowl, add the shredded snow peas, and chopped parsley. Drizzle with evaporated milk and serve.
