Coconut Pumpkin Soup

Ingredient

½ Pumpkin, about 250g

50mL coconut milk

50mL evaporated milk

1 teaspoon salt

50g sweet peas

5g parsley, chopped

Direction

  1. Peel and dice the pumpkin, boil in a pot of water for 30 minutes.
  2. Blend the pumpkin until smooth.Pour pumpkin mixture into a pot, add salt and coconut milk. Mix well and bring to a boil.
  3. In a separate pot, add snow peas to blanch, about 2 minutes, drain completely dry and shred.
  4. Pour the pumpkin soup into a bowl, add the shredded snow peas, and chopped parsley. Drizzle with evaporated milk and serve.

Thai Fish Cakes

Ingredient

  • Minced fish (fresh from fish market) .... 2 kilos
  • Thai red curry paste (1 pack)
  • 3-4 Long string beans
  • Juice of 1 whole lime
  • Some Cilantro & lemon grass
  • Thai sweet & chilli sauce (for dipping)

Direction

1. Put the minced fish into a large mixing bowl

 

2. Chop up the long string bean into little pieces (this gives the fish cake a nice crunchy taste)

 

3. Mix in Thai red curry paste

 

4. Squeeze in juice of 1 lime

 

5. Mix all ingredients well

 

6. Heat oil in a shallow frying pan

 

7. Form little fish patty with your hands (see video)

 

8. Fry the patties until golden brown

 

9. Serve with sweet chilli sauce

International

Vegetarian Thai Green Curry

Ingredient

3 Organic Potatoes

5-6 Organic Carrots

1 Onion

1 Zucchini

1 cup of desired curry base sauce

200ml-300ml water

75-100ml of coconut milk

Direction

  • Wash and coarsely chop the vegetables into chunks. Set aside.
  • In a frying pan, heat up some oil on medium high heat. Sauté onions until aromatic and translucent, about 3 minutes. Add other vegetables and stir together. Cook for 2 more minutes.
  • Add the curry sauce (we are using Thai curry paste) and ½ of the water. Simmer on low heat for 20-25 minutes. Stir from time to time.
  • When the vegetables are cooked, add coconut milk. Stir well. Adjust the curry to your desired consistency and taste by adding water, sugar, and salt.
  • This dish makes a great dinner for 2. Or double up the ingredients for the family / dinner party.

    Coconut Water Chestnut Pudding

    Ingredient

    • 300g of water chestnut
    • 2/3 cup of coconut juice
    • 3/4 cup of sugar
    • 1/4 milk
    • 280g of water chestnut powder
    • 1/2 cup of water
    • 1 teaspoon of oil

    Direction

  • Wash water chestnut and peel off the skin, crush into smash;
  • Dissolved water chestnut powder into water( 2:1), then divide to two part, set aside;
  • In a pot, add 2 cups of water, dissolved sugar into the water with high heat, then add coconut and milk and mix well with low heat, then add water chestnut powder mixture and mix well. Turn off the heat and add another part of water chestnut powder mixture and mix well. Bring a model, apply some oil inside the model. Pour water chestnut powder mixture into the model. Steam for 40 minutes with high heat; take out from heat, sauce till both sides golden, ready to serve.

  • Add coconut juice and milk after the sugar dissolved in water. This will make the cake look better.
