Taiwanese Sesame Oil Chicken

3 Chicken drumsticks

5 Dried mushrooms

250mL Rice wine

170mL Black sesame oil

80g Ginger

15g Wolfberries

5 Red dates

Sea salt

    1. Finely dice the ginger. Soak the dried mushrooms, wolfberries and dates with warm water until soft.
    2. Cut the chicken drumsticks into pieces.
    3. In a pot, add 150mL black sesame oil on medium heat. Add ginger and sauté until fragrant.
    4. Add the chicken drumsticks and sear until golden brown.
    5. Add rice wine, mushrooms, wolfberries and red dates. Reduce to low heat and cook for 20 minutes.
    6. Season with some salt. Remove from heat and add the remaining black sesame oil. Ready to serve.
