Stewed Daikon with Japanese Soy Sauce

Let me tell you a little tip of removing the bitter taste of daikon easily - to cook it with white rice! Once they are done cooking, add in some seasoning and a family dish is simply done.

500g Daikon, peeled

300mL Water

4 tbsp Japanese soy sauce

3 tbsp Rice wine

2 tbsp Sugar

2 tbsp Mirin

2 tbsp Rice

Salt

    1. Thick slice the daikon.
    2. In a pot of water, add daikon and rice. Bring to boil then cook for 15 minutes. Take out the daikon and set aside.
    3. In another pot, add water, Japanese soy sauce, sugar, rice wine and mirin. Bring to boil.
    4. Add daikon and stew for 20 minutes. Season with some salt. Ready to serve.
