Cold Soba Noodles with Daikon Mash in Yuzi Sauce

Other than stewing, there is a lot different ways to cook daikon. Grating the daikon and flavor with yuzi sauce, serving it with soba is also a good choice.

200g Daikon, peeled

200g Soba noodles

1 tbsp Ginger, minced

1 tbsp Kombu soy sauce

2 tbsp Ponzu

1 tsp Sugar

Bonito flakes

White sesame

Nori flakes

Green onion, chopped

    1. Grind the daikon into mash.
    2. Add ginger, bonito flake, white sesame, Kombu soy sauce, ponzu, sugar and mix well.
    3. In a pot, bring water to boil. Add soba noodles and cook until al dente. Transfer to ice water to let cool, drain and transfer to a plate.
    4. Place the daikon mash on top. Sprinkle with green onion and nori flakes. Ready to serve.
